L’étoufé sounds like a fancy dish, but in reality it just means smothered. In this case the fish is cooked on gentle heat with the lid on. It maybe one of the healthiest recipes i’ve made so far, but it’s still a delish one.

If you’re not into peas, swap it out for other seasonal veg, not into dill swap it out for another type of soft herb. Incredibly versatile and honestly easy to make- maybe easier than making rice risotto.
